RFC: Should we use x86-64-v3 builds for the official appimage

There have been various reports about significant performance gains for darktable builds using x86-64-v3 builds, latest spotted example would be at https://www.phoronix.com/review/ubuntu-2610-strix-halo/7

Should we also use that requirement - or provide two versions?

Ignoring the extra labor involved, I would lean toward two versions given the number of requests we still get for binaries supporting old MacOS versions. But given that any desktop CPU from Intel or AMD made within the past decade supports v3, that would be a reasonable choice for the default build (Intel was apparently still introducing new-model Atom processors not supporting v3 as of 2023).
