ci: only install and test the formula on macOS Intel - #51

Since 2026-09-02 the macos-15-intel test-bot job fails in `brew style mergifyio/tap`. Style lints the workflow files with actionlint, which needs shellcheck, and shellcheck's gmp dependency lost its Intel bottle when homebrew-core rebuilt it: Intel macOS is Homebrew Tier 3 and gets no new bottles. gmp then builds from source, the download times out, all-greens fails, and every PR is blocked, including the mergify-cli 2026.9.10.1 bump (#50). Move Intel out of the test-bot matrix into a job that only runs `brew install` and `brew test`, neither of which pulls core formulae. Lint, audit and readall are platform-independent and still run on the other three platforms.
